We also do not appear to have the Subaru OEM remote start option here. So I cannot see anyway I can do it. Does anyone have any suggestions on how to lock the car while leaving the car ... In theory, it will detect if the fob is inside the car vs outside, but these systems are not that precise and get it wrong sometimes.

If you unlock the doors with the app and don't open a door within a minute they will automatically relock, so Subaru has the technology but has chosen not to implement it for normal walk away operations.
